Sticky Toffee Pudding
Moist date sponge drenched in warm toffee sauce - a British winter favorite.

🥄 Ingredients
- 200g pitted dates, chopped
- 300ml boiling water
- 1 tsp bicarbonate of soda
- 85g unsalted butter, softened
- 150g dark brown sugar
- 2 large eggs
- 175g self-raising flour
- 1 tsp vanilla extract
- For the sauce:
- 150g dark brown sugar
- 150ml double cream
- 75g butter

Soak dates in boiling water with bicarbonate of soda for 10 minutes.

Cream butter and sugar until fluffy, then beat in eggs.

Fold in flour and vanilla, then stir in dates with their liquid.

Pour into a greased 20cm square tin, bake at 180°C for 30-35 minutes.

For sauce: simmer all ingredients until thickened.

Poke holes in the pudding and pour over half the sauce.

Serve warm with remaining sauce and vanilla ice cream.
