Coconut rice cake traditionally baked in clay pot over charcoal - a Christmas morning tradition.

- 2 cups rice flour
- 1ยฝ cups coconut milk
- 3 eggs
- 1 cup sugar
- 1 tbsp baking powder
- ยผ cup melted butter
- Banana leaves for lining
- Salted duck eggs, sliced
- Kesong puti (white cheese), sliced
- Freshly grated coconut
- More butter for brushing

Wilt banana leaves over flame and line round pan.

Mix rice flour, baking powder, and sugar.

Beat eggs with coconut milk, add to dry ingredients.

Add melted butter, mix until smooth.

Pour into prepared pan.

Bake at 175ยฐC for 20 minutes.

Top with cheese and salted egg, bake 5 more minutes.

Brush with butter, sprinkle with coconut.

Serve warm with butter and grated coconut.
