Buko Pandan Salad
Young coconut and pandan jelly in cream - a fiesta favorite.

- For pandan jelly:
- 1 pack (25g) unflavored gelatin
- 2 cups pandan juice (from blended leaves)
- 1 cup sugar
- Green food color (optional)
- For salad:
- 3 cups young coconut (buko) meat, cut into strips
- 1 can (390g) condensed milk
- 1 pack (250ml) all-purpose cream
- Small can nata de coco (optional)

Make jelly: dissolve gelatin in pandan juice, add sugar, heat until dissolved.

Pour into shallow pan, refrigerate until set, then cube.

Mix cream and condensed milk until smooth.

Add buko strips and nata de coco.

Gently fold in pandan jelly cubes.

Refrigerate for at least 2 hours.

Serve very cold.
