Traditional Treacle Tart

Golden syrup-filled tart with a crisp shortcrust base - Harry Potter's favorite!

  • For the pastry:
  • 250g plain flour
  • 125g cold butter, cubed
  • 2 tbsp icing sugar
  • 1 egg yolk
  • 2-3 tbsp cold water
  • For the filling:
  • 450g golden syrup
  • 150g fresh white breadcrumbs
  • Zest and juice of 1 lemon
  • 1 egg, beaten

    Make pastry: rub butter into flour and sugar, add yolk and water to form dough.

    Wrap and chill for 30 minutes.

    Roll out and line a 23cm tart tin. Chill again for 15 minutes.

    Warm golden syrup slightly, stir in breadcrumbs and lemon zest and juice.

    Spread filling in pastry case.

    Bake at 190°C for 35-40 minutes until golden.

    Serve warm with clotted cream or custard.
