  • 1 liter full-fat milk
  • 2 tbsp lemon juice or vinegar
  • For sugar syrup:
  • 1 cup sugar
  • 4 cups water
  • For rabri (cream):
  • 1 liter full-fat milk
  • ½ cup sugar
  • ½ tsp cardamom powder
  • Pinch of saffron
  • 2 tbsp chopped pistachios
  • 2 tbsp sliced almonds

    Make chenna: boil milk, add lemon juice to curdle, strain through muslin, squeeze excess water.

    Knead chenna for 8-10 minutes until very smooth.

    Shape into flat oval patties (they will expand).

    Boil sugar and water, add patties, cook covered for 15 minutes.

    Meanwhile, reduce 1 liter milk to half, stirring constantly.

    Add sugar, cardamom, and saffron to reduced milk.

    Squeeze syrup from patties, add to the rabri.

    Chill for at least 4 hours.

    Garnish with pistachios and almonds before serving.
