Pakistani Kheer (پاکستانی کھیر)

  • 2 liters full-fat milk
  • ¼ cup basmati rice, soaked
  • ¼ cup vermicelli (seviyan)
  • ¾ cup sugar
  • ½ tsp cardamom powder
  • 2 tbsp ghee
  • Pinch of saffron
  • ¼ cup almonds, blanched and sliced
  • ¼ cup pistachios, chopped
  • ¼ cup charoli (chironji)
  • Rose water to taste

    Boil milk and reduce by one-third, stirring frequently.

    Add drained rice and cook until soft.

    In separate pan, roast vermicelli in ghee until golden.

    Add vermicelli to milk and cook 10 minutes.

    Add sugar, cardamom, and saffron.

    Add half the nuts and cook 5 more minutes.

    Add rose water, mix well.

    Serve warm or cold, garnished with remaining nuts.
