Pinni (ਪਿੰਨੀ)

  • 2 cups whole wheat flour (atta)
  • 1 cup desi ghee
  • 1 cup powdered sugar
  • ½ cup mixed nuts (almonds, cashews, pistachios), chopped
  • 2 tbsp raisins
  • 2 tbsp desiccated coconut
  • 1 tsp cardamom powder
  • ¼ cup gond (edible gum), fried and crushed

    Heat ghee in heavy pan, add wheat flour.

    Roast on low heat, stirring constantly, until golden and fragrant (20-25 mins).

    Fry gond in a little ghee until it puffs up, crush when cool.

    Remove roasted flour from heat, cool slightly.

    Add sugar, nuts, raisins, coconut, cardamom, and crushed gond.

    Mix well while still warm.

    Shape into round balls while mixture is still warm.

    Store in airtight container.
