  • 400g cold butter
  • 200ml cold water
  • 1 tbsp vinegar
  • Pinch of salt
  • For custard:
  • 1 liter milk
  • 4 egg yolks
  • 200g sugar
  • 60g flour
  • 200g butter
  • 1 tsp vanilla

    Temper egg mixture with hot milk, return to pan, cook until thick.

    Add butter and vanilla. Cool.

    Stack layers with generous cream between each.

    Crumb one layer for topping.
