Paal Payasam (பால் பாயசம்)

Creamy milk rice pudding - the classic Tamil celebration sweet.

  • 2 liters full-fat milk
  • ½ cup raw rice, soaked
  • 1 cup sugar
  • ½ tsp cardamom powder
  • Pinch of saffron
  • 2 tbsp ghee
  • 2 tbsp cashews
  • 2 tbsp raisins
  • Edible camphor (optional)

    Boil milk in heavy pan, reduce to half, stirring constantly.

    Drain rice and add to milk.

    Cook until rice is very soft and breaking down.

    Add sugar and cook until dissolved.

    Add cardamom and saffron.

    Fry cashews and raisins in ghee, add to payasam.

    Add a tiny pinch of edible camphor if using.

    Serve warm or cold.
