🥄 Ingredients

  • 1 liter full-fat milk
  • 2 tbsp lemon juice or vinegar
  • For syrup:
  • 2 cups sugar
  • 6 cups water
  • 2 cardamom pods, crushed
  • 1 tbsp rose water

    Boil milk, add lemon juice to curdle. Strain through muslin.

    Rinse chhena under cold water to remove sourness.

    Hang for 30 minutes, then knead for 8-10 minutes until very smooth.

    Shape into small smooth balls (they will expand to double).

    Make syrup: boil sugar and water with cardamom.

    Drop chenna balls gently into boiling syrup.

    Cover and cook on high for 15 minutes.

    Balls should double in size and become spongy.

    Add rose water, cool in syrup.

    Serve chilled.
