Punjabi Phirni (ਫਿਰਨੀ)

🥄 Ingredients

  • 1 liter full-fat milk
  • ¼ cup basmati rice, soaked 2 hours and ground
  • ½ cup sugar
  • ½ tsp cardamom powder
  • Pinch of saffron in 2 tbsp milk
  • 2 tbsp almonds, blanched and sliced
  • 2 tbsp pistachios, sliced
  • Rose petals for garnish

    Boil milk, stirring to prevent skin.

    Add ground rice paste slowly, stirring to prevent lumps.

    Cook on medium heat until thick and creamy (20-25 mins).

    Add sugar and stir until dissolved.

    Add cardamom and saffron.

    Pour into shikoras (clay pots) or bowls.

    Refrigerate until set (3-4 hours).
