Sakkarai Pongal (சர்க்கரை பொங்கல்)

Sweet rice and lentil pudding - the Pongal festival signature dish.

🥄 Ingredients

  • 1 cup raw rice
  • ½ cup moong dal
  • 1½ cups jaggery, grated
  • 4 cups water
  • 1 cup milk
  • ½ cup ghee
  • ½ tsp cardamom powder
  • ¼ cup cashews
  • 2 tbsp raisins
  • Edible camphor (optional)

    Dry roast moong dal until fragrant, wash with rice.

    Pressure cook rice and dal with water and milk until very soft.

    Mash well to smooth consistency.

  4. 4

    Melt jaggery with ½ cup water, strain.

  5. 5

    Add jaggery syrup to rice mixture, cook until combined.

    Add cardamom and camphor.

  7. 7

    Add ghee gradually while stirring.

    Fry cashews and raisins in ghee, add on top.

  9. 9

    Serve warm.

  • The mixture should be slightly loose - it thickens as it cools
  • Traditional preparation uses brass vessel for extra flavor
