Sakkarai Pongal (சர்க்கரை பொங்கல்)
Sweet rice and lentil pudding - the Pongal festival signature dish.

🥄 Ingredients
- 1 cup raw rice
- ½ cup moong dal
- 1½ cups jaggery, grated
- 4 cups water
- 1 cup milk
- ½ cup ghee
- ½ tsp cardamom powder
- ¼ cup cashews
- 2 tbsp raisins
- Edible camphor (optional)

Dry roast moong dal until fragrant, wash with rice.

Pressure cook rice and dal with water and milk until very soft.

Mash well to smooth consistency.

Melt jaggery with ½ cup water, strain.

Add jaggery syrup to rice mixture, cook until combined.

Add cardamom and camphor.

Add ghee gradually while stirring.

Fry cashews and raisins in ghee, add on top.

Serve warm.
