Rich coconut milk pudding with rice ada - Kerala's signature festive dessert.

- 1 cup ada (rice flakes), soaked
- 1½ cups jaggery, grated
- 2 cups thick coconut milk (first extract)
- 3 cups thin coconut milk (second extract)
- 2 tbsp ghee
- ½ cup cashews
- 2 tbsp raisins
- ½ tsp cardamom powder
- ½ tsp dry ginger powder

Cook soaked ada in thin coconut milk until soft.

In separate pan, melt jaggery with ½ cup water, strain to remove impurities.

Add jaggery syrup to cooked ada, simmer 10 minutes.

Add ghee, cardamom, and dry ginger.

Just before serving, add thick coconut milk. Don't boil after this.

Fry cashews and raisins in ghee, add on top.

Serve warm or at room temperature.
