Saffron rice pudding - traditional Persian offering for special occasions.

- 1 cup basmati rice, soaked overnight
- 8 cups water
- 2 cups sugar
- ½ cup butter
- ½ tsp saffron, steeped in ¼ cup hot water
- 3 tbsp rose water
- 1 tsp cardamom powder
- Cinnamon for garnish
- Sliced almonds and pistachios for garnish

Drain rice and cook in water until very soft and breaking apart (1 hour).

Add sugar and stir until dissolved.

Add butter, saffron water, and rose water.

Cook until mixture is thick and creamy.

Pour into serving bowl or individual dishes.

Decorate with cinnamon patterns and nuts.
