Delicate milk fudge with cardamom - the elegant Bengali sweet.

🥄 Ingredients

  • 1 liter full-fat milk
  • 2 tbsp lemon juice
  • ½ cup powdered sugar
  • ¼ tsp cardamom powder
  • Pinch of saffron
  • Pistachios for garnish

📝 Instructions

    Boil milk, add lemon juice to curdle.

    Strain through muslin, squeeze out all water.

    The chhena should be completely dry.

    Knead chhena until smooth (less than for rasgulla).

    Add sugar and cook on low heat, stirring constantly.

    Add cardamom and saffron.

    When mixture leaves sides of pan, remove from heat.

    Shape into molds while still warm.

    Press pistachio into each and cool.

    Refrigerate and serve cold.

💡 Pro Tips

  • Chhena must be dry for the right texture
  • Don't overcook or it will become hard
