  • 400g fresh strawberries, hulled and quartered
  • 2 tbsp icing sugar
  • 500ml double cream
  • 1 tsp vanilla extract
  • 200g ready-made meringue nests (about 6)
  • Fresh mint leaves for garnish

    Mash half the strawberries with 1 tbsp icing sugar to create a sauce.

    Whip cream with remaining icing sugar and vanilla until soft peaks form.

    Break meringue nests into rough chunks.

    Gently fold meringue pieces and remaining strawberries into cream.

    Swirl through the strawberry sauce.

    Spoon into serving glasses and garnish with mint.

    Serve immediately before meringue softens.
