- For caramel:
- 1 cup sugar
- ¼ cup water
- For custard:
- 10 egg yolks
- 1 can (370ml) evaporated milk
- 1 can (390g) condensed milk
- 1 tsp vanilla extract
- 1 tsp calamansi or lemon zest

Make caramel: heat sugar and water until amber, pour into llanera molds.

Beat egg yolks until pale.

Add evaporated milk, condensed milk, vanilla, and zest. Mix gently (avoid bubbles).

Pour over caramel in molds. Cover with foil.
