Ube Halaya

Purple yam jam - vibrant, sweet, and quintessentially Filipino.

🥄 Ingredients

  • 1 kg ube (purple yam), boiled and mashed
  • 1 can (370ml) evaporated milk
  • 1 can (390g) condensed milk
  • ½ cup coconut milk
  • ½ cup butter
  • ½ cup sugar (adjust to taste)
  • 1 tsp ube extract (optional, for color)
  • Latik (coconut curds) for topping

    Boil ube until very soft, peel and mash thoroughly (or use food processor).

    In large pan, combine mashed ube with all milks.

    Cook over medium heat, stirring constantly.

    Add butter and sugar, continue stirring.

    Add ube extract if using.

    Cook until very thick and pulling away from sides (30-40 mins).

    Pour into greased mold, smooth top.

    Cool, then refrigerate to set.

    Top with latik before serving.

  • The longer you cook, the thicker and better the texture
