Gajar Ka Halwa (गाजर का हलवा)
Rich carrot pudding with khoya and nuts - a winter favorite in North India.

🥄 Ingredients
- 1 kg carrots, grated
- 1 liter full-fat milk
- 1 cup sugar
- ½ cup ghee
- 200g khoya (mawa), crumbled
- ½ tsp cardamom powder
- ¼ cup cashews
- ¼ cup raisins
- 2 tbsp sliced almonds
- Silver leaf (varak) for garnish (optional)

Cook grated carrots in milk over medium heat until milk evaporates (about 45 mins).

Stir frequently to prevent sticking.

Add ghee and sugar, cook for 10 more minutes.

Add crumbled khoya and cardamom, mix well.

In separate pan, fry cashews and raisins in a little ghee.

Add fried nuts to halwa.

Cook until halwa leaves sides of pan.

Garnish with almonds and silver leaf.

Serve hot or at room temperature.
