Sweet saffron rice with nuts and cardamom - a celebration essential.

🥄 Ingredients

  • 2 cups basmati rice
  • 1 cup sugar
  • ½ cup ghee
  • 1 tsp yellow food color (or saffron)
  • ½ tsp cardamom powder
  • ¼ cup almonds, sliced
  • ¼ cup pistachios
  • ¼ cup raisins
  • ¼ cup mixed candied fruits
  • 2 tbsp khoya (optional)
  • Silver leaf for garnish

    Soak rice for 30 minutes, then boil until 80% done. Drain.

    Make sugar syrup with 1 cup water and color.

    In large pan, heat ghee. Add rice and sugar syrup.

    Add cardamom and half the nuts.

    Cover and cook on low heat 15-20 minutes.

    Gently fluff rice, add remaining nuts and candied fruits.

    Add crumbled khoya if using.

    Garnish with silver leaf and serve warm.

  • Don't overcook the rice initially - it will finish cooking in the syrup
  • Handle gently to keep rice grains intact
