Traditional Persian ice cream with saffron and rose - the original.

🥄 Ingredients

  • 2 cups heavy cream
  • 1 can (390g) condensed milk
  • ½ tsp saffron, steeped in 2 tbsp hot milk
  • 2 tbsp rose water
  • 1 cup salep (or cornstarch)
  • ½ cup pistachios, chopped
  • ½ cup frozen cream pieces (optional, traditional)

📝 Instructions

    Dissolve salep in a little cold milk.

    Heat cream with condensed milk, add salep mixture.

    Cook until slightly thickened, stirring constantly.

    Remove from heat, add saffron milk and rose water.

    Cool completely, then churn in ice cream maker.

    Add pistachios and frozen cream pieces in last 5 minutes.

    Freeze until firm.

    Serve between two wafers (like ice cream sandwich).

💡 Pro Tips

  • Salep gives the chewy texture, but cornstarch is a substitute
  • Traditional serving is between thin wafers
