🥄 Ingredients

  • 1 cup besan (gram flour)
  • 1 cup ghee, plus extra for greasing
  • 1½ cups sugar
  • ½ cup water
  • ¼ tsp cardamom powder

    Sieve besan to remove lumps.

    Heat ¾ cup ghee, keep remaining ghee warm and ready.

    Make sugar syrup with sugar and water to one-string consistency.

    Working quickly, add besan to hot ghee, stir to remove raw smell.

    Add besan mixture to sugar syrup, stirring vigorously.

    Keep adding warm ghee in batches while stirring.

    When mixture becomes foamy and leaves sides, add cardamom.

    Pour immediately into greased tray.

    Mark into pieces while still warm.

    Cut fully when cool.
