Kunafa (كنافة)

Crispy shredded phyllo with sweet cheese filling, soaked in rose syrup.

🥄 Mga Sangkap

  • 500g kunafa/kataifi pastry
  • 250g unsalted butter, melted
  • For the cheese filling:
  • 500g akkawi cheese (or ricotta + mozzarella)
  • 2 tbsp sugar
  • For the syrup:
  • 2 cups sugar
  • 1 cup water
  • 1 tbsp lemon juice
  • 1 tbsp rose water
  • Crushed pistachios for garnish

    Soak akkawi cheese in water for 3-4 hours, changing water to remove salt.

    Make syrup: boil sugar and water, add lemon juice, simmer 10 mins, add rose water. Cool.

    Mix kunafa pastry with melted butter, rubbing to coat evenly.

    Press half the pastry into a round pan firmly.

    Spread cheese mixture evenly over pastry.

    Top with remaining pastry, press down gently.

    Bake at 180°C for 40-45 minutes until golden.

    Immediately pour cold syrup over hot kunafa.

    Garnish with crushed pistachios and serve warm.
