Palada Payasam (പാലട പായസം)

Milk-based rice ada pudding - rich, creamy, and aromatic.

🥄 Mga Sangkap

  • 1 cup palada (thin rice ada/noodles)
  • 2 liters full-fat milk
  • 1 cup sugar
  • ½ tsp cardamom powder
  • 3 tbsp ghee
  • ¼ cup cashews
  • 2 tbsp raisins
  • Pinch of saffron (optional)

    Boil palada in water until slightly cooked, drain.

    In heavy pan, boil milk and reduce to half, stirring constantly.

    Add sugar and cooked palada to reduced milk.

    Simmer until palada is very soft and payasam is thick.

    Add cardamom and saffron.

    Fry cashews and raisins in ghee, add to payasam.

  7. 7

    Add remaining ghee and mix.

    Serve warm or cold.
