  • 2 cups raw rice
  • 1½ cups jaggery
  • ½ tsp cardamom powder
  • Ghee for deep frying

    Soak rice for 2 hours, drain and dry completely, then grind to fine powder.

    Melt jaggery with minimal water, strain. Cool slightly.

    Mix rice flour with jaggery syrup to form dough.

    Cover and ferment for 3 days, kneading once daily.

    On day 3, the dough should be elastic and fragrant.

    Shape into small balls, flatten into thick discs.

    Deep fry in ghee on low heat until cooked through (they won't brown much).

    Drain and cool. Store in airtight container.
