- 400g cold butter
- 200ml cold water
- 1 tbsp vinegar
- Pinch of salt
- For custard:
- 1 liter milk
- 4 egg yolks
- 200g sugar
- 60g flour
- 200g butter
- 1 tsp vanilla

Make pastry: cut butter into flour, add water and vinegar. Form dough, chill 1 hour.

Divide into 10 portions, roll each very thin.

Bake at 200°C for 8-10 minutes until golden.

Make custard: heat milk. Whisk yolks, sugar, flour together.

Temper egg mixture with hot milk, return to pan, cook until thick.

Add butter and vanilla. Cool.

Stack layers with generous cream between each.
