Ma'amoul (معمول)
Buttery semolina cookies filled with dates or nuts - an Eid celebration staple.

- 2 cups fine semolina
- 1 cup all-purpose flour
- 1 cup butter, melted
- ¼ cup powdered sugar
- 2 tbsp rose water
- 2 tbsp orange blossom water
- For date filling:
- 300g pitted dates
- 2 tbsp butter
- ½ tsp cinnamon
- Powdered sugar for dusting

Mix semolina and flour, add melted butter, mix well.

Cover and rest overnight or at least 4 hours.

Add sugar and rose/orange blossom water, knead until smooth.

For filling: blend dates with butter and cinnamon.

Take walnut-sized dough ball, flatten, place filling, seal and shape.

Use a maamoul mold or press with fork for design.

Bake at 180°C for 15-20 minutes (don't let them brown too much).

Cool completely, dust generously with powdered sugar.
