๐Ÿฅ„ Ingredients

  • 1 1/3 cups granulated sugar
  • 1/3 cup water
  • 5 large egg whites
  • 1/4 tsp cream of tartar
  • 1 1/2 cups unsalted butter, softened
  • 1 tsp vanilla extract

    Boil sugar and water to 240ยฐF (soft ball stage).

    Meanwhile, whip egg whites and cream of tartar to soft peaks.

    With mixer running, slowly stream hot syrup into whites.

    Continue whipping until bowl is cool.

    Add butter one piece at a time, then vanilla.

    Beat until smooth and glossy.
