  • 5 large egg yolks
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 vanilla bean, scraped (optional)
  • 6 tbsp superfine sugar for topping

    Add hot water to baking dish halfway up ramekins.

    Bake 40-45 minutes until set but jiggly in center.
