- 4 cups all-purpose flour
- 1/3 cup sugar
- 1 tbsp salt
- 2 1/4 tsp instant yeast
- 1 1/4 cups cold milk
- 1 1/2 cups cold butter for lamination
- 1 egg for egg wash

Mix flour, sugar, salt, yeast. Add milk to form rough dough.

Knead until smooth. Wrap and refrigerate overnight.

Pound butter into 6x8 inch rectangle.

Roll dough to 8x16 inches, encase butter.

Fold in thirds (letter fold). Chill 1 hour.

Repeat rolling and folding 2 more times.

Roll to 1/4 inch, cut triangles, shape into croissants.
