๐ฅ Ingredients
- 1 batch choux pastry
- 2 cups whole milk for pastry cream
- 1/2 cup sugar
- 4 egg yolks
- 3 tbsp cornstarch
- 2 tbsp butter
- 1 tsp vanilla
- 6 oz semi-sweet chocolate for glaze
- 1/4 cup heavy cream

Pipe choux into 4-inch fingers. Bake at 400ยฐF for 30 minutes.

Make pastry cream: heat milk. Whisk yolks, sugar, cornstarch.

Temper hot milk into yolk mixture, return to pot.

Cook until thick. Stir in butter and vanilla. Cool.

Fill cooled eclairs with pastry cream.

Melt chocolate with cream. Dip tops of eclairs.

Refrigerate until set.
