Kheer (खीर)

Creamy rice pudding with cardamom and nuts - a festive Indian classic.

  • 1 liter full-fat milk
  • ¼ cup basmati rice, soaked 30 mins
  • ½ cup sugar (or to taste)
  • ½ tsp cardamom powder
  • Pinch of saffron in 2 tbsp warm milk
  • 2 tbsp ghee
  • 2 tbsp cashews
  • 2 tbsp raisins
  • 2 tbsp sliced almonds
  • 2 tbsp chopped pistachios

    Bring milk to boil in heavy-bottomed pan, stirring often to prevent skin.

    Drain rice and add to boiling milk.

    Cook on low heat for 45-50 minutes, stirring frequently.

    When rice is fully cooked and milk is reduced by half, add sugar.

    Add cardamom and saffron milk.

    In separate pan, fry cashews and raisins in ghee until golden.

    Add to kheer along with almonds.

    Serve warm or chilled, garnished with pistachios.
